Cookies are a wonderful treat, I try to make them as healthy as possible without compromising the flavor or texture. These are addicting and wonderful, and they store well!
Amaranth Chocolate Chip and Toffee Cookies

Ingredients
- 2 cubes (1 cup) softened butter
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 T vanilla
- 1 t. salt
- 1 t. baking soda
- 2½ cups WonderFlour™
- 1 cup popped amaranth
- 2 cups chocolate chips
- 1 cup toffee pieces
Instructions
- In WonderMix mixer, mix the butter and sugars until smooth.
- Add in the eggs and vanilla and mix until smooth.
- Add in the salt, baking soda, flour, popped amaranth and mix until smooth.
- Add chocolate chips and mix again.
- Scoop onto a parchment paper lined cookie sheet and flatten out.
- Bake in a preheated 325 degree oven for 8 to 12 minutes. Do Not Over Bake!
