Cookies are a wonderful treat, I try to make them as healthy as possible without compromising the flavor or texture. These are addicting and wonderful, and they store well!

Amaranth Chocolate Chip and Toffee Cookies

Ingredients
  • 2 cubes (1 cup) softened butter
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2 eggs
  • 1 T vanilla
  • 1 t. salt
  • 1 t. baking soda
  • 2½ cups WonderFlourâ„¢
  • 1 cup popped amaranth
  • 2 cups chocolate chips
  • 1 cup toffee pieces
Instructions
  1. In WonderMix mixer, mix the butter and sugars until smooth.
  2. Add in the eggs and vanilla and mix until smooth.
  3. Add in the salt, baking soda, flour, popped amaranth and mix until smooth.
  4. Add chocolate chips and mix again.
  5. Scoop onto a parchment paper lined cookie sheet and flatten out.
  6. Bake in a preheated 325 degree oven for 8 to 12 minutes. Do Not Over Bake!
