This is a wonderful flat bread and it also makes wonderful dinner rolls, light and tender.
Cheesy Flat Bread

Ingredients
- 1 cup sour dough starter
- 3 cups hot water
- 2 egg whites
- 1 cup feta cheese
- 2 tablespoons sugar
- 1 tablespoon kosher salt
- 2 tablespoons olive oil
- 1 cup whole grain or whole grain flour, teff or amaranth works well
- 1 cup fresh ground pop corn
- 5 to 7 cups high gluten white flour
- 4 tablespoons Saf instant yeast
Instructions
- Place all ingredients except feta cheese in WonderMix bowl adding only half the white flour and placing the yeast on top of the flour.
- Turn on mixer and add more flour until dough pulls away from the sides of the bowl.
- Mix for 5 minutes and then add feta cheese, knead for another quick minute.
- Remove from bowl and let rise, and then divide and roll into circles.
- Top with olive oil, Kosher salt, fresh mozzarella cheese, and rosemary.
- Bake on a hot pizza stone, 500 degrees is hot.
- Bake for 5 to 7 minutes depending on oven.
- Remove and enjoy. Great served with Rigatoni.
