Pork in the Traeger smokerI love chicken and waffles,  I  recently smoked a pork picnic in my Traeger Smoker and wondered how it would taste on waffles compared to chicken.  Oh my.  It was amazing in every way.

Yeasted Buttermilk Waffles

Ingredients
    • 1 Tablespoon saf instant yeast or one cup Chef Brad’s Sour Dough Starter
    • 2 Tablespoons sugar
    • 4 cups buttermilk
    • ¾ cup unsalted melted butter
    • 2 teaspoons salt
    • 5 cups fresh ground spelt flour. Grind on the finest setting on your WonderMill.
    • 4 eggs, beaten
  • 1 ½ teaspoons baking soda
Instructions
    1. The night before serving, begin the waffle batter. In Wondermix bowl combine yeast, sugar, buttermilk, butter, salt, and flour. Use cookie whips to blend. Mix well. Place cover on bowl and place in refrigerator overnight.
    1. Next day when ready to serve, spray waffle iron with non-stick spray and heat up. Beat eggs and baking soda together. Whisk into batter until evenly incorporated. Ladle into waffle iron.
    1. For a tender waffle, cook on a lower temperature.
    1. For a crisp waffle, cook on a higher temperature.
    1. To serve all at once place cooked waffle in a oven preheated to 250°.
  1. To store waffles, cool on wire rack and place in plastic freezer bags. Freeze up to one month.
Buttermilk Syrup

Ingredients
    • 1 cup butter
    • 1 cup buttermilk
    • 2 cup sugar
    • 2 teaspoon vanilla
  • 1 teaspoon baking soda
Instructions
    1. Place butter, buttermilk, and sugar in deep pan.
    1. Bring to boil and add vanilla and baking soda.
    1. Whisk, this will foam up a lot, make sure you have a deep pan.
    1. I usually double or triple the recipe.
  1. Enjoy.
