Ingredients

6 cups prepared bulgar wheat*
3 cups cooked vanilla black beans**
½ cup scallions, chopped
2 bell peppers, chopped
½ cup jicama, chopped
2 cups carrots, chopped
2 cups broccoli florets, chopped
1 ½ cups walnut pieces

Combine and toss with dressing.

Dressing

1 cup olive oil
½ cup flax oil
½ cup plum vinegar
1 teaspoon salt
½ teaspoon pepper
2 cloves crushed garlic

Mix ingredients. Toss with salad.

Directions

*To prepare Bulgar: Pour 3 cups hot water on 3 cups wheat and let set till water is absorbed.

**To prepare Black Beans: Cook one part beans to 3 parts water add 1 teaspoon vanilla. Pressure on 2nd ring for 45 minutes. Drain to use for salads.
