This recipe is so fallish. I love the butternut squash, it adds so much texture and flavor.

Cranberry Butternut Squash Apple Crisp

Ingredients
  • For the filling:
  • 3 cups cubed butternut squash, (you can find it already cubed this time of the year)
  • 4 peeled, seeded, and sliced apples
  • 1 cup fresh cranberries
  • 1/4 cup butter
  • 1 cup sugar or xagave
  • 1/3 cup Wonderflour or white flour
  • For the Crisp:
  • 3 cups rolled oats
  • 1 cup chopped nuts
  • 1/2 cup coconut
  • 1/2 cup WonderFlourâ„¢
  • 1/2 cup melted butter
  • 2 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon vanilla
  • 1 tablespoon cinammon
Instructions
  1. Steam butternut squash until almost tender.
  2. In large sauce pan add butter, sugar, apples, squash, and cranberries.
  3. Cook until apples are almost tender.
  4. Add flour and mix to thicken.
  5. Pour in large oven proof casarole and top with topping.
  6. Bake in a 350 degree oven until golden brown.
  7. About 15 minutes.
  8. Serve with ice cream or whipped cream.
