This is a great side dish for fish or chicken. The left over can be used to make Amaranth Potato Pancakes (see recipes)
Savory Amaranth Pilaf

Ingredients
- 2 T. olive oil
- 1 shallot, minced
- 2 T. parsley
- ¼ cup raisins
- ¼ cup pistachios
- 4 cups vegetable broth
- 2 ½ cup amaranth, whole grain uncooked
- Pinch salt and pepper
Instructions
- Add oil in a medium pot and sauté the shallot and parsley. Add in raisins, pistachios, broth, amaranth, salt and pepper. Bring to a boil, then drop the heat to medium and simmer for 10 minutes. Let pilaf set for 10 minutes.
- Serve this as a side dish, or use to make the “Amaranth Potato Pancakes”.
