Nothing like a stuffed tomato, but this filling can be used for sandwiches or try filling up a seeded cantaloupe with the filling for an extra treat.

Chicken Stuffed Tomato

Ingredients
  • 1 cup slivered almonds
  • 3 bunches fresh basil (optional)
  • Fresh Thyme
  • Mexican oregano
  • Zest of one lemon
  • 1 bunch green onions, chopped
  • 2 chicken breasts, cooked and shredded
  • 3 cups millet, cooked
  • 1 cup dried cranberries
  • ½ fresh pineapple, cored and chopped
  • 2 Tablespoons dijon mustard
  • 1 cup mayonnaise
  • ½ cup sour cream
  • Tomatoes left whole, insides scooped out
  • Lettuce
  • Salt and pepper to taste
Instructions
  1. Place almonds, herbs, zest, and green onion in a food processor and process.
  2. Place mixture and all the rest of the ingredients in a bowl and mix well.
  3. Scoop into tomatoes and place on a bed of lettuce.
