Corn: Cracked Corn Salad

  • 3 cups cracked corn, cooked Crack pop corn by placing in hand grinder or powerful blender to crack.
  • 4 avocados, cubed
  • 1 clove elephant garlic, small diced and lightly sautéed
  • 1 pint cherry tomatoes, yellow and red, halved
  • 12 oz jar roasted red peppers, about 2 peppers, chopped
  • ½ of a large fresh red bell pepper, diced
  • ¼ cup fresh parsely, chopped
  • 2 (6oz) containers crumbled goat cheese
  • Stuffed cherry peppers for garnish

  • Dressing:
  • ⅓ cup Sicilian Lemon Balsamic Vinegar
  • ⅓ cup flax oil
  • ⅓ cup extra virgin olive oil
  1. Crack corn using a hand grinder. Cook using a 2:1 ratio (two cups water, to one cup corn), and chill.
  2. In a large mixing bowl combine all of the salad ingredients but goat cheese and toss with the dressing. Place in a serving bowl and top with crumbled goat cheese and stuffed cherry peppers for garnish.
