Non Fried Mexican Fried Ice Cream

  • 4 cups corn flakes
  • 1 cup hazelnuts
  • 1 cup pumpkin seeds, roasted
  • ½ cup coconut
  • ½ cup teff, uncooked whole grain.
  • 1 cup popped amaranth
  • 2 teaspoons cinnamon
  • Dash of nutmeg
  1. Place pistachios, pumpkin seeds, coconut, cinnamon, and nutmeg in a food processor and chop fine. Add corn flakes and process for a second, and then remove from food processor and place in a large bowl, and add popped amaranth and teff . Toss well.
  2. Scoop a good quality vanilla ice cream into balls and roll in breading. Place on a lined sheet pan and freeze.
  3. Top with Xagave, fresh strawberries, and whipped cream.
