Ingredients
  • 2 cups cooked Farro
  • 2 cups Farro flour
  • 4 cups hot water
  • 1 cup sour dough starter
  • ¼ cup olive oil
  • ¼ cup sugar
  • 1 tablespoon salt
  • 1 cup feta cheese
  • ½ cup chopped roasted red pepper
  • 9 cups of white flour
  • 3 tablespoons yeast
Instructions
  1. Place cooked farro and farro flour in WonderMix bowl with water, sour dough starter, olive oil, sugar, salt, cheese, roasted peppers, and 5 cups of white flour.
  2. Place yeast on top of flour and turn on mixer.
  3. Add enough remaining flour until dough pulls away from the sides of the bowl.
  4. Mix for six minutes. Remove from bowl and divide into loaves.
  5. Let rise until double in size.
  6. Bake in 400 degree oven for 5 minutes, dropping the temperature to 325 degrees for the remaining time. Internal temperature should be 210 degrees.

Ingredients
  • 1 cup sourdough
  • 1 cup feta cheese
  • 1 jar chopped pitted kalamata olives
  • 2 cups hot water
  • 2 tablespoons olive oil
  • ¼ cup sugar
  • 1 tablespoon salt
  • 2 cups Fresh ground buckwheat flour
  • ¼ cup Saf instant yeast
  • 4 to 6 cups natural white flour
Instructions
  1. Place all ingredients, except olives and feta, in mixer with half the flour and yeast going in last (placing the yeast on top).
  2. Turn on mixer and add remaining flour until dough cleans sides of bowl.
  3. Knead for 5 minutes and than add the olives and feta.
  4. Knead for one more minute and then remove and separate dough into 2 pieces.
  5. Roll out dough and let rise.
  6. Using fingers, make indents in top of dough and brush with oil and sprinkle with kosher salt and rosemary or herbs.
  7. Bake in hot 500 degree oven on preheated pizza stone until golden brown.

Ingredients
  • ½ cups hot water
  • ¼ cup melted butter
  • ¼ cup sugar
  • 2 teaspoons salt
  • 1 tablespoon cardamon
  • 2 tablespoons yeast
  • 1 cup fresh ground whole wheat
  • 2 to 3 cups white flour, King Arthurs bread flour
Instructions
  1. Place all ingredients in WonderMix mixer using only half the white flour, placing the yeast on top of the flour.
  2. Turn on mixer and add more flour as needed until the dough pulls away from the sides of the bowl.
  3. Knead for 6 minutes.
  4. Remove from bowl and form into free standing loaf.
  5. Let rise double. Slice cuts into the top of the bread.
  6. Bake in the steam oven using steam and convection 30 minutes at 345 degrees or on a pizza stone in a 375 degree oven for the same amount of time or until the internal temp. reaches 180 degrees.

Ingredients
  • 4 cups hot water
  • 2 cups cooked brown rice and barley
  • ¼ cup sugar
  • ¼ cup olive oil
  • 2 teaspoons salt
  • 2 cups whole grain flour
  • 1 cup feta cheese
  • 2 tablespoons Saf instant yeast
  • High Gluten Bread Flour, King Arthur is great
Instructions
  1. Place water, grains, sugar, oil, salt, cheese, whole grain flour, and 2 cups bread flour in mixer. Place yeast on top and turn on mixer. Mix adding flour until dough just starts to pull away from the sides of the bowl. Knead for 6 minutes. Remove from bowl and form into rolls. Let rise until double. Bake in a preheated 400 degree oven, dropping the temp. to 325 degrees for 20 to 25 minutes or until the inside temp is 180 degrees.

Ingredients
  • 12 ripe bananas, mashed
  • 1½ cups shortening
  • 2 tablespoons baking soda, added to sour milk
  • 3 cups sour milk or buttermilk
  • 6 cups sugar
  • 2¼ teaspoon salt
  • 10 cups Chef Brad's Wonder Flour or Chef Brad's Gluten Free WonderFlour
  • ½ cup flax meal
  • 3 cups nuts, chopped
Instructions
  1. Cream together bananas, shortening, sour milk (with soda) and sugar. Add flour, salt, flax meal, and nuts. Bake in greased pans 1 hour at 350 degrees.

Whole grain breads are so amazing and this recipe is great! If it is too grainy, soak the grains in hot water first.

10 Grain Whole Wheat Bread

Ingredients
  • 2 cups 10 grain cereal (can be six, eight, etc.)
  • 3 cups warm water
  • ⅓ cup vegetable oil
  • ⅓ cup Xagave nectar
  • 2 T dough enhancer
  • 3 T Saf-instant yeast
  • 1 T salt
  • 5 cups whole grain flour
  • 2 cups unbleached white bread flour
Instructions
  1. In mixer with a dough hook, start by adding the cereal, water, oil, xagave, salt, and dough enhancer. Add in half of the amount of flour, which is 3 ½ cups. Add the yeast last on top of everything. Begin mixing and continue to add in the rest of the flour until it pulls away from the sides. When it does, let it knead for 6 more minutes to develop the gluten.
  2. Place in a bowl rubbed with a little oil, and let it rise/rest for a few minutes.
  3. Cut the dough into three pieces, and form into loaves. Place in 2lb loaf pans or form free standing loaves and place on cookie sheets. Brush the loaves with an egg wash and sprinkle some oats on top.
  4. Preheat oven to 400 degrees. Put loaves in oven, and then reduce heat to 325 degrees. Cook for 30 minutes or until the internal temperature of the bread comes to 180 degrees.
