Spelt Sweet Candied Ginger Scone

Scones are so simple and easy to make. Spelt makes them so tasty and ups the nutrition.

Ingredients
3 cups spelt flour
1 T. baking powder
3 T. sugar
2 t. salt
½ cup crystallized ginger
2 cups heavy cream + additional


Directions
Preheat oven to 375 degrees.

Whisk together flour, baking powder, sugar, and salt. Add in crystallized ginger, tossing to combine. Stir in cream with a fork until a sticky dough forms.

Turn dough out onto a lightly floured surface and knead 8 times with floured hands. Form into a round loaf. Brush top of round with additional cream and cut each into 8 wedges.

Arrange wedges about ½ inches apart on an ungreased large baking sheet and bake until golden brown, about 20 minutes. Cool on a rack.
