Roasted Leek Mashed Potatoes |

- 2 large leeks, cut in half length ways and roasted in the oven. You can place them under the broiler or bake in a 450 degree oven.
- 2 to 4 lbs. golden potatoes, washed and any bad parts removed
- Salt and pepper
- Butter
- Sour cream
- Cook whole potatoes in pressure cooker for 12 minutes.
- After cooking, drain water and add roasted chopped leeks, butter, 1 to 2 cubes, sour cream, 2 to 3 cups, and salt and pepper.
- Mash well adding milk if needed.
