White Quinoa Chicken Soup |

- 4 large chicken breasts, cubed
- 1 onion, diced
- 2 large cloves of garlic, minced
- 1 Tablespoon minced or grated ginger
- 3 Tablespoons Olive Oil
- ¼ cup Haco chicken soup base
- ½ cup rice
- ¾ cup quinoa
- ¼ pound pasta
- 3 quarts water
- Salt and pepper to taste
- In a large pressure cooker (I use the 8 qt. electric), turned on high, add the oil, onion, garlic, and ginger. Sauté for a couple of minutes and add chicken.
- Continue cooking for a couple of minutes.
- Add the grains and pasta with water and soup base.
- Place lid on pressure cooker and cook for 7 minutes.
- Release pressure and salt and pepper to taste.
