Savory Amaranth Pilaf

  • 2 T. olive oil
  • 1 shallot, minced
  • 2 T. parsley
  • ¼ cup raisins
  • ¼ cup pistachios
  • 4 cups vegetable broth
  • 2 ½ cup amaranth, whole grain uncooked
  • Pinch salt and pepper
  1. Add oil in a medium pot and sauté the shallot and parsley. Add in raisins, pistachios, broth, amaranth, salt and pepper. Bring to a boil, then drop the heat to medium and simmer for 10 minutes. Let pilaf set for 10 minutes.
  2. Serve this as a side dish, or use to make the "Amaranth Potato Pancakes".
