- 3 cups mashed, cooked sweet potatoes or yams
- 1 cup sugar
- ½ cup half & half
- ½ cup butter
- 2 eggs
- 1 teaspoon vanilla
- ½ teaspoon salt

- Topping:
- 2 cups cooked red quinoa
- 1 cup coconut
- 1 cup chopped pecans
- 1 cup dark brown sugar
- ⅓ cup whole grain flour
- ⅓ cup melted butter
- Pinch of nutmeg
- Mix all of the ingredients together in a large bowl. Spread evenly in an oven safe baking dish that has been sprayed with non stick cooking spray. Top the potatoes with the quinoa nut topping and bake in a 375 degree oven for 35 minutes.

- Topping:
- Melt the butter. Stir in the flour, sugar, nuts, coconut, and nutmeg. Mix together with the cooked red quinoa. Place on top of potatoes.
