- 3 firm pears, cored
- 2 cups fresh cranberries
- 1 cup fresh figs
- 1 cup chopped dates
- 1 cup raisins
- ½ cup Xagave
- ¼ cup White Balsamic Vinegar
- About 1 cup of stock (turkey, ham or chicken drippings work great
- ½ cup butter
- ¼ cup olive oil
- In a large sauce pan, place butter and oil and melt. Add the pears and caramelize adding the Xagave.
- Add the remaining fruit and cook until the cranberries burst.
- Add the vinegar and stock.
- Simmer until it thickens and then remove from the heat.
- You can serve it over sliced meat like lamb, turkey, chicken or ham.
