Christmas Chilean Beet Salad |

- 8 to 10 beets, cooked and cut into ½ inch pieces
- 8 eggs, hard boiled and chopped
- ½ onion, chopped
- 1 cup cooked red quinoa
- Fresh squeezed lemon juice from two lemons
- Mayonnaise, about a cup or so, enough to make it nice
- In a bowl stir together the lemon juice and mayonnaise till combined.
- Add in the rest of the ingredients and fold together until combined.
- Season with salt and pepper.
