- 1 sheet puff pastry, un-frozen (keep refrigerated, but take out about 10-20 minutes before using. It needs to be manageable, but not too warm.)
- 1 medium round of Brie
- ½ cup fig jam or spread
- ¼ cup cashews (roasted)
- Unfold puff pastry.
- In the middle, place the fig jam or spread, cashews, and cheese round.
- Fold sides of dough up, over, and around the sides of the cheese.
- Turn over onto a sheet pan so the folds are on the bottom.
- Bake in a preheated 400 degree oven for 20-25 minutes.
- Serve with crackers or toasted bread.
