- ½ recipe of the Savory Amaranth Pilaf (see recipes)
- To that add:
- 3 eggs
- 1 ½ cups whole wheat flour
- 2 cups hash browns
- 2 t. Rumfords baking powder
- Whisk all of the ingredients together in a bowl.
- Heat a non stick skillet with olive oil.
- Pour or spoon in batter to make pancakes.
- Cook for about 2 minutes on each side or until golden brown.
- Serve with warm maple syrup.
