Strawberry Asparagus Salad

Ingredients
  • For the Salad:
  • Fresh strawberries
  • Fresh Asparagus
  • Fresh Leafy lettuce
  • Feta Cheese
  • Pine nuts, roasted or almond
  • Cooked Kamut
  • Fresh mushrooms, sliced
  • Roasted red peppers
  • =
  • For the Dressing:
  • ¼ cup Xagave
  • ¼ cup olive oil
  • ¼ cup flax oil
  • ¼ cup white balsamic vinegar
  • ¾ cup fresh strawberries
  • dash salt
Instructions
  1. Chop lettuce and place on serving dish.
  2. Cut ends off asparagus and saute in olive oil, xagave, and splash of balsamic vinegar.
  3. Do not over cook the asparagus.
  4. Lighty toast pinenuts in a saute pan over medium heat.
  5. Slice strawberries, mushrooms, and red peppers.
  6. Place over lettuce with cooked kamut, about ½ cup.
  7. Place cooked asparagus around edges and garnish with nuts and feta cheese.
  8. Mix dressing ingredients in blender and drizzle over the top of the salad.
