Oven Roasted Tomato Sauce

  • 12 roma tomatoes cut in half length ways
  • ½ cup sugar
  • 2 teaspoons sea salt
  • 2 teaspoons pepper
  • ¼ teaspoon anise seed
  • 12 cloves garlic
  • ¼ onion chopped fine
  • ⅓ cup fresh basil chopped fine
  • ⅓ cup olive oil
  1. Place sugar, salt, and pepper in a gallon size zip lock bag.
  2. Place tomatoes in bag and shake to coat with mixture then poor in oven safe pan.
  3. Then Saute' garlic and onion in oil until tender, add basil and saute' for a moment.
  4. Poor over tomatoes and place in 400 degree oven until tomatoes appear crispy around the edges.
  5. After tomatoes are cooked remove from pan with juice, cool and place in blender and blend.
