- For the wings:
- 1 habanero chili, seeded
- ½ cup each of soy sauce, honey, brown sugar, lime juice, orange juice, olive oil, and apple cider vinegar
- 4 Tablespoons Jerk Seasoning
- 6 garlic cloves
- 4 green onions

- For the Sauce:
- 2 cups held back marinade
- 1 ½ cups BBQ sauce
- For the wings:
- Place all ingredients in food processor and puree. Hold back 2 cups for later. Place remaining marinade in large dish with 5 to 8 lbs. of chicken wings. Marinate for 6 hours to overnight. Bake in a 400 degree oven until done, about 25 minutes. Remove and toss with below sauce. Caramelize in large skillet or on Thermador Griddle.

- Place in sauce pan and simmer for about 15 minutes.
