Old Fashioned Buttermilk Teff Bread

Ingredients
  • 3 cups hot water
  • ¾ cup buttermilk powder OR 3 cups hot buttermilk
  • 1 cube melted butter
  • ½ cup sugar
  • 1 tablespoon salt
  • 1 cup whole teff grain
  • 2 cups fresh ground barley flour
  • 2 cups fresh ground white wheat flour
  • 3 to 5 cups natural white flour
  • 2 teaspoons dough enhancer
  • 3 tablespoons yeast
Instructions
  1. Place all ingredients in mixing bowl, placing the yeast on top and holding back on some of the flour.
  2. Turn on machine and add remaining flour until dough pulls away from the sides of the bowl. Knead for 6 minutes.
  3. Divide dough into 2 equal pieces and form round freestanding loaves.
  4. Place on parchment lined baking pan and let rise to double.
  5. Place in a 400 degree oven for five minutes and drop temp. to 325 degrees
  6. Bake for about 20 minutes longer or until internal temp. reaches 180 degrees.
