Cracked Wheat Potato Bread

Ingredients
  • 3 cups cooked cracked wheat
  • 4 cups hot water
  • 2 cooked peeled potatoes, riced
  • ⅓ cup sourdough starter
  • 
1/3 cup oil
  • 
1/3 cup Xagave or honey
  • 
1 tablespoon sea salt
  • 
3 tablespoons saf instant yeast
  • 6 cups whole wheat flour
  • 6-8 cups high gluten white flour
Instructions
  1. Preheat oven to 400 degrees.
  2. Place cooked cracked wheat, water, potatoes, sourdough starter, oil, Xagave, and salt in WonderMix bowl.
  3. Place fresh ground wheat flour on top and place yeast on top of that.
  4. Turn on WonderMix and add white flour until dough cleans side of the bowl.
  5. Knead for 6 minutes, remove from bowl and shape into loaves.
  6. Let dough rise until double.
  7. Turn oven down to 325 degrees and bake for 25 to 30 minutes or until internal bread temperature is 180 degrees.
