- 6 cups hot water
- 2 cups 14-grain mix (available for Pantry Members under "Top Secret Grain Blends")
- 3 cups high gluten wheat flour
- ⅔ cup canola oil (cold pressed)
- ⅔ cup honey or sugar
- 2 tablespoons salt
- 3 tablespoons dough enhancer
- 3 tablespoons Saf yeast
- 10 or more cups fresh ground whole-wheat flour (prairie gold)
- Preheat oven to 400 degrees.
- Combine ingredients in WonderMix mixer bowl with dough hook, using only half the flour, with the yeast on top. Begin mixing, add flour until dough cleans sides of bowl. Knead 6 minutes or until the gluten has developed.
- Divide into 5 loaves, cover, and let rise in loaf pans, sprayed with nonstick pan spray until double in size. After placing bread in oven, drop temperature to 325 degrees. Bake 20-25 minutes, or until internal bread temperature reaches 180 degrees.
