- 1 cup slivered almonds
- 3 bunches fresh basil (optional)
- Fresh Thyme
- Mexican oregano
- Zest of one lemon
- 1 bunch green onions, chopped
- 2 chicken breasts, cooked and shredded
- 3 cups millet, cooked
- 1 cup dried cranberries
- ½ fresh pineapple, cored and chopped
- 2 Tablespoons dijon mustard
- 1 cup mayonnaise
- ½ cup sour cream
- Tomatoes left whole, insides scooped out
- Lettuce
- Salt and pepper to taste
- Place almonds, herbs, zest, and green onion in a food processor and process.
- Place mixture and all the rest of the ingredients in a bowl and mix well.
- Scoop into tomatoes and place on a bed of lettuce.
