Holiday Orange Rolls

  • 4 cups hot milk
  • ¾ container orange juice concentrate, reserve remaining for topping
  • 1 large yam, cooked and peeled, I use the pressure cooker
  • 2 teaspoons orange oil
  • 4 eggs
  • ⅓ cup agave or sugar
  • ½ cup melted butter plus 1 cube for baking pan
  • 1 tablespoon salt
  • 12 plus cups of natural white flour
  • 3 tablespoons yeast
  1. Place milk, ½ cup butter, eggs, sugar, and orange oil with yam in blender. Blend well.
  2. Add to WonderMix mixer bowl and add salt and 8 cups of flour.
  3. Place yeast on top of flour and turn on mixer.
  4. Mix adding flour until dough pulls away from the sides of the bowl.
  5. Knead for 4 to 6 minutes.
  6. Form into rolls and place in baking dish that has melted butter on bottom or dip rolls in melted butter.
  7. Place on baking dish and let rise until double.
  8. Bake in a 350 degree oven for 20 to 25 minutes or until done.
  9. Remove from heat and let cool.
  10. Top with orange glaze (recipe below).
