These are the best yams I have ever eaten. I love the quinoa topping. It is a family favorite.

Red Quinoa Coconut Yams

Ingredients
  • 3 cups mashed, cooked sweet potatoes or yams
  • 1 cup sugar
  • ½ cup half & half
  • ½ cup butter
  • 2 eggs
  • 1 teaspoon vanilla
  • ½ teaspoon salt

  • Topping:
  • 2 cups cooked red quinoa
  • 1 cup coconut
  • 1 cup chopped pecans
  • 1 cup dark brown sugar
  • ⅓ cup whole grain flour
  • ⅓ cup melted butter
  • Pinch of nutmeg
Instructions
  1. Mix all of the ingredients together in a large bowl. Spread evenly in an oven safe baking dish that has been sprayed with non stick cooking spray. Top the potatoes with the quinoa nut topping and bake in a 375 degree oven for 35 minutes.

  4. Melt the butter. Stir in the flour, sugar, nuts, coconut, and nutmeg. Mix together with the cooked red quinoa. Place on top of potatoes.
