This is a wonderful flat bread and it also makes wonderful dinner rolls, light and tender.

Cheesy Flat Bread

Ingredients
  • 1 cup sour dough starter
  • 3 cups hot water
  • 2 egg whites
  • 1 cup feta cheese
  • 2 tablespoons sugar
  • 1 tablespoon kosher salt
  • 2 tablespoons olive oil
  • 1 cup whole grain or whole grain flour, teff or amaranth works well
  • 1 cup fresh ground pop corn
  • 5 to 7 cups high gluten white flour
  • 4 tablespoons Saf instant yeast
Instructions
  1. Place all ingredients except feta cheese in WonderMix bowl adding only half the white flour and placing the yeast on top of the flour.
  2. Turn on mixer and add more flour until dough pulls away from the sides of the bowl.
  3. Mix for 5 minutes and then add feta cheese, knead for another quick minute.
  4. Remove from bowl and let rise, and then divide and roll into circles.
  5. Top with olive oil, Kosher salt, fresh mozzarella cheese, and rosemary.
  6. Bake on a hot pizza stone, 500 degrees is hot.
  7. Bake for 5 to 7 minutes depending on oven.
  8. Remove and enjoy. Great served with Rigatoni.
